When you start doing good with that, you’ll live and forget the trauma, it won’t be fully but you’ll remember the lesson that the Lord up above put upon you. Things don’t work out sometimes because He above has something better for you in the future as long as you self love yourself for who you are. Life lessons learned become part of your strength, and the pain diminishes over time. 

Best Stuffed Squash Recipe Ever

Not only are these roasted stuffed squash boats the best, but are also easy and can be vegan! 

Ingredients:

2 medium acorn or butternut squashes;
hollowed and halved *Save the pulp, no seeds*
1/2 teaspoon dried Italian seasoning
1 teaspoon onion powder
1 teaspoon garlic powder
1 cup spinach, chopped (fresh or frozen)
1 pound ground Italian sausage or chickpeas
2 teaspoons olive oil
1/2 cup water
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1 tablespoon brown sugar
Salt and pepper to taste
Cooking spray
1 cup Mozzarella, cheddar, or vegan cheese, shredded

Preheat the oven to 400°F. Coat a large rectangular baking with with cooking spray.
Trim off the stem ends and then cut the winter squashes into four halves and hollow them out completely with a spoon or knife. Save the insides, except for the seeds.
In a medium-sized skillet, heat the olive oil and then cover and cook the Italian sausage or chickpeas, Italian seasoning, onion powder, garlic powder, and spinach until the meat is thoroughly cooked and the spinach is tender-this takes about five minutes. Salt and pepper to taste.
After the meat and spinach are cooked, add the scooped out insides of the squashes with the water, nutmeg, cinnamon, and brown sugar. Cover again and cook another three to five minutes.
Put the four squash halves on the spray-coated baking sheet at about two inches apart. I usually cover the baking the sheet with aluminum foil and then spray it with the oil, for an easier cleanup process later on. Equally fill each squash half with the mixture.
Top with the shredded cheese (1/4 cup cheese per halved squash). Bake for about 20 minutes to half an hour, or until winter squashes are tender and the cheese is golden brown. MAN, this

Note: To make this vegan, substitute the sausage with chickpeas and top with a hearty vegan cheese.
