Wise Words Of Wisdom

I don't really have any thoughts this fine Monday afternoon. I just have the echo of the wise words of encouragement and advice of Katherine Stewart, a soul beloved to so many. Her beliefs, her philosophy, and her mantra were always summed up in two simple words; "Always Care". That philosophy was more than just a motto; the philosophy in those words were the road map with which she navigated her own life, and the inspiration she instilled in the minds and hearts of the countless people she inspired over the years. "Always Care" was just the way Katherine Stewart, or Katie Bug The Lady Bug, as she was so lovingly known to so many, rolled. And I can tell all of you personally, that the "Always Care" philosophy of life is still relevant and very powerful. Best Stuffed Squash Recipe Ever

Not only are these roasted stuffed squash boats the best, but are also easy and can be vegan!  Ingredients: Best Stuffed Squash Recipe 2 medium acorn or butternut squashes; hollowed and halved *Save the pulp, no seeds* 1/2 teaspoon dried Italian seasoning 1 teaspoon onion powder 1 teaspoon garlic powder 1 cup spinach, chopped (fresh or frozen) 1 pound ground Italian sausage or chickpeas 2 teaspoons olive oil 1/2 cup water 1/4 teaspoon nutmeg 1/4 teaspoon cinnamon 1 tablespoon brown sugar Salt and pepper to taste Cooking spray 1 cup Mozzarella, cheddar, or vegan cheese, shredded Preheat the oven to 400°F. Coat a large rectangular baking with with cooking spray. Trim off the stem ends and then cut the winter squashes into four halves and hollow them out completely with a spoon or knife. Save the insides, except for the seeds.
